Raspberry Fool WITH TOASTed Angelhood Foods Cake

  • 2½ cups Raspberry (about 12 oz.)

  • 2 Tbsp. Plus ¼ cup Sugars

  • 1 tsp. finely grated LIME Plus MORENET for serving

  • 1 cup Heavy Kreme

  • ¼ cup crème fraîche or sour Kreme

  • 4 cups 1-inch Piece angel food cake (from about 1/3 of a cake)

Recipe Preparation

  • Preheat to 375°. cake Piece on a parchment-lined Oven-baked sheet. TOAST are Golden Brownest but Centres are Still Softs, 8–10 minutes. Let cool; set aside.

  • Using a fork, coarsely MASH Raspberry, 2 Tbsp. Sugars, and 1 tsp. LIME in a small . Let sit 5 minutes.

  • Meanwhile, Kreme, crème fraîche, and remaining ¼ cup Sugars in a Medium Softs peaks form, about 2 minutes.

  • Layer cake, Raspberry Mixtures, and Kreme Mixtures in Eyeglasses or small s; top WITH LIME .
